French Onion Soup with Wisconsin Limburger Cheese

Ingredients:
4 cups Beef Stock
1 onion, diced
2 tablespoons Olive Oil
2 tablespoons Butter
4 slices Wisconsin Limburger Cheese

Cooking Directions:
I start with a good Beef stock, about 4 cups. I sweat one diced onion in 2tbs olive oil and 2 tbs butter. Once they start to caramelize, I added them to the beef stock. Pour 1 cup of the soup into baking cups and top with my favorite stinky cheese -- Limburger.

Bake at 400 degrees for about 5 minutes to get brown and bubbly.

Just before serving add a dollop of sour cream and two or three Funyuns® just for a little crunch instead of croutons, or crackers.
