Wisconsin Limburger Cheese Spaghetti

Ingredients:
Chicken - 6 to 8 pieces, legs & thighs
Spaghetti - one 16 oz. pkg.
Tomato Sauce - 2 eight oz. cans
Tomato Paste - 1 six oz. can
Onion - 1 medium - chopped
Garlic - two chopped cloves, or 1 tsp. dry minced
Italian seasoning - 1 tsp.
Limburger Spread - 2 eight oz. containers (Do not use brick Limburger)
Salt & Pepper
Cooking Directions:
Start the Chicken stewing in just enough water to cover it. When good and hot, add tomato paste and sauce. Salt and Pepper to taste. You will do this more than once during the cook time. Add about one teaspoon of Italian seasoning, and the Garlic. After cooking fifteen minutes in the sauce, taste test, and adjust seasonings to your liking, then turn down, add onion, and let simmer. You can simmer as long as you like, but not so long the meat falls from the bone.
You will need about forty minutes to cook the Spaghetti separately. Cook in a large pot, adding a little salt to the water as it comes to a boil, then add the Spaghetti. Stir with a fork in the beginning so it doesn't stick together. (Do not overcook)
When the Spaghetti has cooked , drain in a colander, put back into the pot while still warm, and add the Limburger Spread. Spoon it into the Spaghetti, and stir it in as you add it. After the first 8 oz.,
add a ladle of the sauce to the mix, then add the second 8 oz. of the cheese, and another ladle of the sauce. After it is mixed well, add the amount of sauce to the mixture, to get the moisture content you would like to the Spaghetti. It should be creamy, slightly orange-ish in color, and smooth. (It helps to warm the Limburger before adding to the Spaghetti)
Place the Spaghetti in a large serving bowl, and the remainder of the sauce with the Chicken in a separate serving bowl. The Spaghetti and the Chicken are served separately on individual plates, and the tomato sauce is available for those who would like more sauce with their Spaghetti.
A large Italian Salad, and Garlic Bread, (warmed, of course) completes the dinner nicely.
