Wisconsin Limburger Chicken

Ingredients:
2 chicken breasts, split into four and pounded to about 1/4 inches.
8 tablespoons of Limburger Spread or 4 nice slices of Limburger cheese and put on the chicken breast.  
4 tablespoons finely diced onion. spread 1 tablespoon on each of the four chicken breasts
Dash of salt on each breast and then roll up, jelly roll fashion
4 slices bacon and wrap around each chicken jelly roll.

Cooking Directions:
Fry in 2 tablespoons oil until nicely browned.  Remove from skillet and keep warm and add 1 cup chicken broth and 1/2 cup of white wine to pan.  Bring to boil and add flour or corn starch mixed with a little chicken broth or wine and stir until thickened.  Put the chicken back in the pan, cover and bake 30 to 45 minutes til juices run clear.
