Limburger, Asparagus, Mushroom & Red Onion Omelet

Ingredients
2 eggs well beaten
2 Asparagus spears thinly chopped
3 whole mushrooms thinly sliced
1/8 red onion diced
2 slices of Limburger Cheese halved
2-3 tsp Olive oil
Garlic Pepper seasoning
Directions
In a small pan, add 1 tsp olive oil, Asparagus, mushroom, and red onion saute over medium heat, season with Garlic Pepper to taste. When mushrooms begin to brown mixture is ready.
In same or different pan heat 1-2 tsp olive oil, over medium heat add eggs when eggs begin to cook add the sauteed mixture on half of egg and Limburger Cheese on top of that, when egg is almost completely cook through fold bare side over top of mixture and cheese. After about 30 seconds flip omelet over and heat for approximately another 30 seconds or so.
Serve with Jewish rye and a nice dose of Franks red hot. Enjoy.
