Sauerkraut Royale

Servings: 8
Ingredients:
Potato Layer:
2-1/2 pounds potatoes, peeled, cooked
1 tablespoon butter
1/3 cup milk
Dash pepper
Dash nutmeg
Sauerkraut Layer:
1 can (16 ounces) sauerkraut
8 slices (1 ounce each) cooked ham
Cheese Sauce:
2 tablespoons butter
2 tablespoons flour
1-1/4 cups milk
1/2 cup (2 ounces) Wisconsin Colby Cheese, shredded
1/2 cup (2 ounces) Wisconsin Sharp Cheddar Cheese, shredded
Dash pepper
Dash paprika
Cooking Directions:
Mash potatoes with butter and milk until light and smooth. Season with salt, pepper and nutmeg and spoon into 12x8-inch baking dish.
Heat sauerkraut five minutes; drain well, pressing out excess moisture. Divide sauerkraut among ham slices; fold to enclose sauerkraut. Arrange ham on top of potatoes.
Melt butter in saucepan; add flour and cook 1 minute over medium heat. Gradually add milk, stirring continuously; cook until sauce is thickened. Stir in cheese and seasonings; heat until cheese is melted. Pour cheese sauce over ham. Bake at 375°F for 20 minutes until top is golden brown.
