Proper storage is the most important kindness you can show your cheese.
To ensure that original flavor, appearance and quality is maintained:
1. Wrap in air-tight packaging - original package, waxed paper,
transparent wrap, aluminum foil, plastic bags, or sealed containers.
2. Refrigerate natural cheese at temperatures of 35º - 40º (normal
refrigerator temperatures).
Many natural cheeses may keep up to a month when properly stored.
The hard cheese varieties will last almost indefinitely.
